  • 2 tablespoons olive oil
  • 1 tablespoon sea salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 lemon, halved
  • Fresh herbs (such as rosemary, thyme, and parsley)
  • Vegetables for roasting (such as carrots, potatoes, and onions)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub the olive oil all over the chicken, then season with sea salt and black pepper.
  4. Stuff the cavity of the chicken with minced garlic, lemon halves, and fresh herbs.
  5. Arrange the vegetables around the chicken in the roasting pan.
