French Onion Soup

A classic French dish made with caramelized onions, beef broth, and topped with melted cheese.

  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 8 slices of baguette
  • 2 cups grated Gruyère cheese

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions and sugar, cooking until caramelized, about 30-40 minutes.
  3. Pour in the white wine and scrape the bottom of the pot to deglaze.
  4. Add the beef broth and thyme, then season with salt and pepper.
  5. Simmer for 30 minutes to allow flavors to meld.
  6. Preheat the oven to 350°F (175°C).
  7. Place the baguette slices on a baking sheet and toast until golden.
  8. To serve, ladle the soup into bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese.
  9. Bake in the oven until the cheese is bubbly and golden, about 10 minutes.

Notes

  • For a vegetarian version, substitute beef broth with vegetable broth.
  • Feel free to add a splash of sherry for extra flavor.
