Fresh Green Bean Casserole from Scratch

A classic homemade green bean casserole made from fresh ingredients, perfect for any gathering.

  • 1 pound fresh green beans, trimmed
  • 1 cup sliced mushrooms
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans in boiling water for 5 minutes, then drain and set aside.
  3. In a skillet, heat the butter and olive oil over medium heat. Add the onion, garlic, and mushrooms. Cook until softened, about 5 minutes.
  4. Stir in the broth and heavy cream. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Add the blanched green beans to the skillet. Season with salt and pepper. Stir to combine.
  6. Transfer the mixture to a baking dish. Top with fried onions.
  7. Bake in the preheated oven for 20 minutes, or until bubbly and golden brown on top.

Notes

  • You can use frozen green beans if fresh ones are not available.
  • For a vegetarian version, use vegetable broth instead of chicken broth.
