  • 3 cups cooked mac and cheese, chilled and firm
  • 1 cup shredded cheddar cheese (optional for extra cheesiness)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Breading Station
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp milk
  • 1½ cups panko breadcrumbs
  • ½ cup grated Parmesan cheese (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • For Frying
  • Vegetable oil for deep frying

Instructions

  1. Prepare the mac base: Mix chilled mac and cheese with cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly combined.
  2. Shape balls: Scoop and roll into 1″ balls. Place on a parchment-lined baking sheet.
  3. Freeze: Chill in freezer for 30 minutes to firm up.
  4. Set up breading: In three bowls—flour; whisked eggs + milk; panko + Parmesan + salt + pepper.
  5. Bread balls: Coat each ball in flour, egg wash, then panko mixture. Return to freezer for 15 minutes.
  6. Fry: Heat oil to 350 °F. Fry balls in batches for 2–3 min per side until golden and crisp.
  7. Drain & serve: Transfer to paper towels to drain. Serve hot.

  • Chilling properly keeps them from falling apart.
  • Maintain oil at 350 °F for perfect crispiness.
