Garlic Butter Steak Bites and Potatoes

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 cups baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, boil the halved baby potatoes until fork-tender, about 10-15 minutes.
  3. Drain the potatoes and toss them with 2 tablespoons of butter, salt, and pepper.
  4. Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until golden and crispy.
  5. In a skillet over medium-high heat, melt the remaining 2 tablespoons of butter.
  6. Add the steak bites to the skillet and season with salt, pepper, and thyme.
  7. Cook the steak bites for 3-4 minutes until browned and cooked to your desired doneness.
  8. Add the minced garlic to the skillet and cook for an additional minute.
  9. Serve the steak bites with the roasted potatoes and garnish with fresh parsley.
