  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss carrots, parsnips, and sweet potatoes with olive oil.
