Garlic Shrimp Fried Rice

A quick and flavorful dish combining garlic, shrimp, and fried rice for a satisfying meal.

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1/2 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp black pepper
  • 1 green onion, chopped

Instructions

  1. Heat 1 tbsp oil in a large pan over medium-high heat.
  2. Add shrimp and cook for 2-3 minutes until pink. Remove and set aside.
  3. Add remaining oil to the pan. Stir in garlic and cook for 30 seconds.
  4. Add beaten eggs and scramble until fully cooked.
  5. Mix in peas and carrots, then stir in rice.
  6. Pour soy sauce and sesame oil over the rice. Toss to combine.
  7. Return shrimp to the pan and mix well.
  8. Season with black pepper and garnish with green onions.

Notes

  • Use cold rice for best texture.
  • Adjust soy sauce to taste.
  • Add chili flakes for extra heat.
