  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix gluten-free breadcrumbs, parmesan cheese, garlic powder, oregano, salt, and pepper.
  3. Dip each chicken piece into beaten eggs, then coat with the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat. Cook chicken bites for 2-3 minutes per side until golden brown.
  5. Transfer chicken to a baking sheet. Top each piece with marinara sauce and mozzarella cheese.
  6. Bake for 8-10 minutes until cheese melts and chicken is fully cooked.
  7. Serve warm.
