Gluten-Free Oatmeal Cookies

Simple and delicious gluten-free oatmeal cookies that are easy to make and perfect for a healthy snack.

Ingredients

  • 1 cup gluten-free rolled oats
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the oats, almond flour, coconut sugar, cinnamon, and salt.
  3. Add the maple syrup, melted coconut oil, and vanilla extract. Stir well.
  4. Fold in the chocolate chips if using.
  5. Scoop tablespoon-sized portions onto the baking sheet and flatten slightly.
  6. Bake for 12-15 minutes or until golden brown.
  7. Let cool before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • For a nut-free version, replace almond flour with oat flour.
  • Adjust sweetness by adding more or less maple syrup.
