A refreshing and healthy gluten-free pasta salad perfect for any occasion.

Ingredients

  • 8 oz gluten-free pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the gluten-free pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Sprinkle the crumbled feta cheese on top before serving.

Notes

  • You can add other vegetables like bell peppers or zucchini.
  • For a vegan version, omit the feta cheese or use a vegan alternative.
