  • 1 medium head cauliflower, grated
  • 1 large egg
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 cup tomato sauce
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced black olives
  • 1/4 cup sliced red onion
  • 1/2 cup crumbled goat cheese
  • 1 tbsp fresh basil leaves

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Grate cauliflower and microwave for 5 minutes. Let cool.
  3. Squeeze excess moisture from cauliflower using a clean towel.
  4. Mix cauliflower with egg, mozzarella, Parmesan, salt, pepper, and oregano.
  5. Press mixture into a pizza crust shape on a lined baking sheet.
  6. Bake for 20 minutes until golden and firm.
  7. Spread tomato sauce, then top with mushrooms, olives, red onion, and goat cheese.
  8. Bake for another 10 minutes.
  9. Garnish with fresh basil before serving.

Notes

  • Use parchment paper to prevent sticking.
  • Dry cauliflower thoroughly to avoid a soggy crust.
  • Add toppings just before baking for best texture.
