Sausage Dirty Rice (Gluten-Free)

Ingredients

  • 1 lb gluten-free sausage
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage and cook until browned. Remove and set aside.
  3. In the same skillet, add onion, bell pepper, celery, and garlic. Cook until softened.
  4. Stir in rice, paprika, black pepper, and salt. Cook for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
  7. Return sausage to the skillet and mix well.
  8. Serve hot.
