A delicious gluten-free vegetable lasagna packed with fresh veggies and rich flavors.

  • 12 gluten-free lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook gluten-free lasagna noodles as per package instructions.
  3. Sauté zucchini, bell pepper, and spinach in olive oil until tender.
  4. Mix ricotta, garlic powder, basil, salt, and pepper in a bowl.
  5. Layer marinara sauce, noodles, ricotta mix, veggies, and mozzarella in a baking dish.
  6. Repeat layers and top with Parmesan.
  7. Bake for 25-30 minutes until bubbly and golden.
  8. Let cool for 5 minutes before serving.
