Golden turmeric carrot soup

A warm and comforting soup made with golden turmeric and fresh carrots. Perfect for a healthy meal.

Ingredients

  • 4 large carrots, chopped
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground turmeric
  • 4 cups vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in turmeric and chopped carrots, cook for 2 minutes.
  4. Pour in vegetable broth, bring to a boil.
  5. Reduce heat and simmer until carrots are tender.
  6. Blend the soup until smooth.
  7. Stir in coconut milk, season with salt and pepper.
  8. Serve warm.
