Greek Chicken & Hummus Bento

A delicious and healthy Greek-inspired bento box featuring chicken and hummus.

Ingredients

  • 1 boneless, skinless chicken breast
  • 1/2 cup hummus
  • 1/2 cup cherry tomatoes
  • 1/4 cup sliced cucumber
  • 1/4 cup crumbled feta cheese
  • 1/4 cup kalamata olives
  • 1 whole wheat pita, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Season chicken with oregano, salt, and pepper.
  2. Heat olive oil in a pan over medium heat.
  3. Cook chicken for 6-7 minutes per side until fully cooked.
  4. Slice cooked chicken into strips.
  5. Assemble bento box with hummus, tomatoes, cucumber, feta, olives, and pita.
  6. Place chicken strips on top.
  7. Serve immediately or refrigerate for later.
