Greek Cucumber Tomato Salad

A refreshing and simple Greek cucumber tomato salad with crisp vegetables, feta cheese, and a light olive oil dressing.

  • 4 medium tomatoes, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and dice the cucumbers and tomatoes.
  2. Thinly slice the red onion.
  3. Combine cucumbers, tomatoes, red onion, and olives in a large bowl.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss gently.
  6. Sprinkle crumbled feta cheese on top.
  7. Serve chilled.
