Green Chile Chicken Enchiladas

Delicious green chile chicken enchiladas packed with flavor and perfect for a comforting meal.

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) green chile enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt to taste
  • 1 tbsp vegetable oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat oil and sauté onions until translucent.
  3. Add shredded chicken, cumin, garlic powder, and salt. Mix well.
  4. Warm tortillas briefly in a dry skillet or microwave.
  5. Fill each tortilla with chicken mixture and roll tightly.
  6. Place rolled enchiladas seam-side down in a baking dish.
  7. Pour green chile sauce over enchiladas.
  8. Sprinkle both cheeses evenly on top.
  9. Bake for 20-25 minutes until cheese is bubbly and golden.
  10. Serve warm.

Notes

  • Use rotisserie chicken for quicker preparation.
  • For extra spice, add chopped jalapeños.
  • Can substitute flour tortillas if preferred.
