Grilled Corn & Black Bean Salad

A fresh and flavorful salad combining grilled corn with black beans and a zesty lime dressing.

Ingredients

  • 2 ears of corn, husked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 2 tbsp olive oil
  • 1 lime, juiced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. Grill corn for 10 minutes, turning occasionally, until lightly charred.
  3. Cut kernels off the cob.
  4. In a large bowl, combine corn, black beans, bell pepper, red onion, avocado, and cilantro.
  5. In a small bowl, whisk olive oil, lime juice, salt, and pepper.
  6. Pour dressing over salad and toss gently.
  7. Serve immediately or refrigerate.
