  • 4 small pumpkins
  • 1 lb ground turkey
  • 1/2 cup brown butter
  • 1/4 cup chopped fresh sage
  • 1 cup cooked quinoa
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the pumpkins and scoop out the seeds.
  3. In a skillet, melt the brown butter over medium heat.
  4. Add the ground turkey and cook until browned.
  5. Stir in the chopped sage, cooked quinoa, and Parmesan cheese.
  6. Season with salt and pepper.
  7. Stuff the mixture into the hollowed pumpkins.
  8. Place the pumpkins in a baking dish and add a little water to the bottom.
  9. Bake for 30-40 minutes until the pumpkins are tender.
