  • 1 cup shredded cheese (optional)

  • 1 teaspoon dried herbs (thyme, rosemary, or oregano)
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the mixed vegetables with olive oil, salt, pepper, and dried herbs.
  3. Roll out the pie crust on a baking sheet lined with parchment paper.
  4. Spread the vegetable mixture in the center of the crust, leaving a 2-inch border.

  6. Fold the edges of the crust over the filling, pleating as necessary.
