Hashbrown casserole (funeral potatoes)

A delicious and comforting hashbrown casserole, also known as funeral potatoes, that is loved by everyone.

Ingredients

  • 2 pounds frozen hashbrowns
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup melted butter
  • 1 cup cornflakes (crushed)
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the frozen hashbrowns, cream of chicken soup, sour cream, cheddar cheese, melted butter, onion powder, salt, and pepper.
  3. Mix well until all ingredients are combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. In a separate bowl, mix the crushed cornflakes with a little melted butter and sprinkle over the top of the casserole.
  6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Let it cool for a few minutes before serving.

Notes

  • This dish can be prepared ahead of time and refrigerated before baking.
  • Feel free to add cooked bacon or ham for extra flavor.
  • For a vegetarian version, ensure the cream of chicken soup is replaced with a vegetarian alternative.
