  • 1 boneless, skinless chicken breast
  • 1 medium sweet potato, diced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Cook the brown rice according to package instructions.
  2. Season the chicken breast with garlic powder, paprika, salt, and black pepper.
  3. Heat olive oil in a pan over medium heat and cook the chicken for 6-7 minutes per side until fully cooked. Let it rest, then slice.
  4. In the same pan, sauté the diced sweet potato until tender, about 8-10 minutes.
  5. Assemble the bowl with rice, sliced chicken, and sweet potatoes. Garnish with cilantro if desired.
