  • 34 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. Set the instant pot to sauté mode and add olive oil.
  3. Brown the roast on all sides, about 4-5 minutes per side.
  4. Remove the roast and set aside.
  5. Add onions, carrots, and potatoes to the pot and sauté for 2-3 minutes.
  6. Add garlic, thyme, rosemary, and Worcestershire sauce, stirring to combine.
  7. Return the roast to the pot and pour in the beef broth.
  8. Close the lid and set the instant pot to cook on high pressure for 60 minutes.
  9. Once done, allow for natural pressure release for 10-15 minutes before manually releasing any remaining pressure.
  10. Remove the roast and let it rest for a few minutes before slicing and serving with the vegetables.

  • For extra flavor, marinate the roast overnight with herbs and spices.
  • Feel free to add other vegetables like celery or parsnips.
  • Leftovers can be stored in the refrigerator for up to 3 days.
