1 lb lean ground beef or turkey
1 onion, diced
2 cloves garlic, minced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup corn (fresh or frozen)
1 bell pepper, chopped
2 tbsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1 cup low-sodium beef or vegetable broth
Instructions
Brown the ground meat in a skillet over medium heat. Drain excess fat.
Add diced onion and minced garlic. Cook for 2-3 minutes until softened.
Transfer the meat mixture to the slow cooker.
Add all remaining ingredients to the slow cooker and stir well.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Stir before serving. Adjust seasoning if needed.
Notes
For a spicier chili, add a diced jalapeño or increase the chili powder.
Top with shredded cheese, sour cream, or avocado before serving.
