  • 1 lb lean ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup low-sodium beef or vegetable broth

Instructions

  1. Brown the ground meat in a skillet over medium heat. Drain excess fat.
  2. Add diced onion and minced garlic. Cook for 2-3 minutes until softened.
  3. Transfer the meat mixture to the slow cooker.
  4. Add all remaining ingredients to the slow cooker and stir well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir before serving. Adjust seasoning if needed.

Notes

  • For a spicier chili, add a diced jalapeño or increase the chili powder.
  • Top with shredded cheese, sour cream, or avocado before serving.
  • This chili freezes well for up to 3 months.
