Healthy turmeric quinoa pilaf

A nutritious and flavorful quinoa dish infused with turmeric, packed with protein and antioxidants.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 tsp turmeric powder
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup peas
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse quinoa under cold water until water runs clear.
  2. Heat olive oil in a saucepan over medium heat.
  3. Add onion and garlic, sauté until translucent.
  4. Stir in turmeric, carrot, and peas, cook for 2 minutes.
  5. Add quinoa and water or broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
  7. Fluff with a fork, season with salt and pepper.
  8. Garnish with fresh cilantro before serving.

Notes

  • For extra flavor, toast quinoa in a dry pan before cooking.
