  • 2 cups white beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Sauté for 5 minutes.
  3. Drain the soaked beans and add them to the pot.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat to low, add rosemary, and simmer for 45 minutes.
  6. Season with salt and pepper.
  7. Blend half the soup for a creamy texture if desired.
  8. Serve hot.
