Chicken and Wild Rice Soup

A hearty and nutritious soup combining tender chicken and wild rice for a comforting meal.

Ingredients

  • 1 cup wild rice
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until softened.
  3. Stir in wild rice, chicken broth, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Add shredded chicken and cook for another 10 minutes.
  6. Serve hot.

  • Use leftover chicken for convenience.
  • Adjust seasoning to taste.
  • Store leftovers in the fridge for up to 3 days.
