Heirloom Tomato Galette

A savory galette featuring fresh heirloom tomatoes, perfect for summer gatherings.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 68 tablespoons ice water
  • 23 large heirloom tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface into a 12-inch circle.
  5. Transfer the dough to a baking sheet lined with parchment paper.
  6. Spread mozzarella cheese over the dough, leaving a 2-inch border.
  7. Arrange tomato slices on top of the cheese, sprinkle with basil, olive oil, salt, and pepper.
  8. Fold the edges of the dough over the filling, pleating as necessary.
  9. Bake for 30-35 minutes or until the crust is golden brown.
  10. Let cool for a few minutes before slicing and serving.

Notes

  • Feel free to use any variety of heirloom tomatoes.
  • Serve warm or at room temperature.
  • Can be made ahead and reheated in the oven.
