2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, chilled and diced
6–8 tablespoons ice water
4–5 heirloom tomatoes, sliced
1 cup shredded mozzarella cheese
1/4 cup fresh basil, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix flour and salt. Cut in butter until the mixture resembles coarse crumbs.
Stir in ice water, a tablespoon at a time, until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
Roll out the dough on a floured surface into a circle about 12 inches in diameter.
Transfer the dough to a baking sheet lined with parchment paper.
Spread mozzarella cheese over the dough, leaving a 2-inch border.
Arrange the sliced heirloom tomatoes on top of the cheese, overlapping slightly.
Sprinkle with chopped basil, olive oil, salt, and pepper.
Fold the edges of the dough over the tomatoes, pleating as necessary.
Bake for 35-40 minutes or until the crust is golden brown.
Let cool slightly before slicing and serving.
