Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  2. In a separate bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
