A delicious and flavorful herb-roasted chicken that is perfect for any occasion.

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 4 cloves garlic, minced
  • 1 lemon, halved
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. In a small bowl, mix together olive oil, salt, pepper, thyme, rosemary, and minced garlic.
  4. Rub the herb mixture all over the chicken, including under the skin.
  5. Stuff the cavity of the chicken with lemon halves.
  6. Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
  8. Garnish with fresh herbs if desired and serve.

  • For extra flavor, marinate the chicken overnight with the herb mixture.
  • Serve with roasted vegetables or a fresh salad.
  • Leftovers can be stored in the refrigerator for up to 3 days.
