Heritage Breed Pork Belly Roast

  • 23 pounds heritage breed pork belly
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Score the skin of the pork belly in a crosshatch pattern.
  3. Rub the pork belly with olive oil, salt, and pepper.
  4. In a small bowl, mix garlic, rosemary, and thyme, then rub this mixture over the pork belly.
  5. Place the pork belly in a roasting pan and pour chicken broth around it.
  6. Cover the pan with foil and roast for 2-3 hours until tender.
  7. Remove the foil and increase the oven temperature to 450°F (230°C) to crisp the skin for an additional 30 minutes.
  8. Let the pork belly rest for 15 minutes before slicing and serving.

  • For extra flavor, marinate the pork belly overnight.
  • Serve with roasted vegetables or a fresh salad.
