A hearty and nutritious high-fiber chickpea veggie bake packed with protein and vegetables. Perfect for a healthy meal.

Ingredients

  • 2 cups cooked chickpeas
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1 cup chopped carrots
  • 1/2 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix chickpeas, bell peppers, zucchini, carrots, red onion, and garlic.
  3. Add cumin, paprika, salt, and olive oil. Toss to coat.
  4. Spread the mixture in a baking dish.
  5. Bake for 25-30 minutes until vegetables soften.
  6. If using cheese, sprinkle on top and bake for 3-5 more minutes.
  7. Serve warm.
