  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced

  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
  3. In a large bowl, combine black beans, corn, diced bell pepper, and avocado.
  4. Add the cooked quinoa to the bowl and mix well.
  5. Drizzle lime juice over the mixture and season with cumin, salt, and pepper.
  6. Toss everything together and garnish with fresh cilantro before serving.
