High fiber lentil vegetable stew

A hearty and nutritious stew packed with lentils and vegetables, perfect for a healthy meal.

Ingredients

  • 1 cup dried lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and bell pepper. Cook until softened.
  3. Stir in lentils, diced tomatoes, vegetable broth, cumin, and paprika.
  4. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  5. Season with salt and pepper.
  6. Serve hot.
