High Protein Broccoli Cheddar Soup

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup cooked chicken breast, shredded
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  2. Add broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Stir in the shredded chicken and milk, cooking until heated through.
  4. Using an immersion blender, blend the soup until smooth, or leave it chunky if preferred.
  5. Stir in the shredded cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste. Serve hot.
