  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, zested and juiced
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix garlic, rosemary, thyme, olive oil, lemon zest, lemon juice, salt, and pepper.
  3. Rub the herb mixture all over the leg of lamb.
  4. Place the lamb in a roasting pan and pour chicken broth around it.
  5. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  6. Let the lamb rest for 15 minutes before slicing.
  7. Serve with your choice of sides.
