  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives
  • 1/4 cup tzatziki sauce

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Coat chicken with olive oil, oregano, garlic powder, salt, and pepper.
  3. Grill or pan-fry chicken for 6-7 minutes per side until fully cooked.
  4. Let chicken rest for 5 minutes before slicing.
  5. Assemble bowls with quinoa, sliced chicken, cucumbers, tomatoes, red onion, feta, and olives.
  6. Drizzle with tzatziki sauce before serving.
