  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 cups mixed greens
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp honey

Instructions

  1. Preheat grill or skillet over medium heat.
  2. Rub chicken with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.
  4. In a large bowl, combine mixed greens, black beans, corn, red onion, bell pepper, and cilantro.
  5. In a small bowl, mix Greek yogurt, lime juice, and honey to make the dressing.
  6. Top salad with sliced chicken and drizzle with dressing.
  7. Serve immediately.
