Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup shiitake mushrooms, sliced
  • 6 cups vegetable broth
  • 1 tsp turmeric
  • 1/2 tsp black pepper
  • 1 cup spinach
  • 1 lemon, juiced
  • Salt to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté for 2 minutes.
  3. Add carrots, celery, and mushrooms. Cook for 5 minutes.
  4. Pour in vegetable broth, turmeric, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in spinach and lemon juice. Cook for 2 more minutes.
  7. Season with salt and serve hot.
