  • 2 cups fresh sweet corn kernels (or thawed frozen corn)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 0.25 cup finely chopped green onions
  • Optional: 1/2 cup diced smoked ham
  • Optional: 2 tablespoons cream cheese
  • Neutral oil for frying

Instructions

  1. Cut kernels from fresh corn cobs if using whole corn.
  2. In a large bowl, whisk flour and baking powder.
  3. In another bowl, beat eggs. Stir in corn kernels, sharp cheddar, green onions, and any optional add-ins like cream cheese or smoked ham.
  4. Gently fold wet ingredients into dry until just combined—don’t overmix.
  5. Heat oil in a skillet over medium heat. Drop batter in spoonfuls and fry 2–3 minutes per side until golden.
  6. Drain on paper towels. Serve hot.

Notes

For best texture, thaw and dry frozen corn thoroughly before use. Leftovers reheat best in a hot skillet or air fryer.
