Italian White Bean and Kale Soup

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups vegetable broth
  • 2 (15-oz) cans white beans, drained and rinsed
  • 1 bunch kale, stems removed and leaves chopped
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in thyme and rosemary.
  4. Pour in vegetable broth and bring to a simmer.
  5. Add white beans and kale. Cook for 10 minutes until kale is tender.
  6. Season with salt, pepper, and lemon juice. Serve hot.
