Ingredients

  • 4 cups chopped kale
  • 1 large apple, sliced
  • 1/4 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the kale thoroughly.
  2. Chop the kale into bite-sized pieces.
  3. Slice the apple into thin pieces.
  4. In a large bowl, combine kale, apple slices, walnuts, and dried cranberries.
  5. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  6. Pour the dressing over the salad and toss well.
  7. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

  • Massage the kale with a bit of olive oil to soften it before adding other ingredients.
  • Replace walnuts with almonds or pecans if preferred.
