Kelp Noodle Sesame Salad

  • 8 oz kelp noodles, rinsed and drained
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Soak kelp noodles in warm water for 10 minutes, then drain and rinse.
  2. Whisk together sesame oil, rice vinegar, soy sauce, honey, garlic, and ginger in a small bowl.
  3. Combine kelp noodles, carrot, cucumber, and green onions in a large bowl.
  4. Pour dressing over the salad and toss well.
  5. Sprinkle with sesame seeds before serving.
