A hearty and flavorful keto beef stew with tender meat and low-carb vegetables.

  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup mushrooms, sliced
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onion, garlic, and celery to the pot. Cook until softened.
  4. Pour in beef broth and bring to a simmer.
  5. Return the beef to the pot. Add salt, pepper, thyme, and bay leaf.
  6. Cover and simmer for 1.5 hours, stirring occasionally.
  7. Add mushrooms and cook for another 30 minutes.
  8. Stir in heavy cream and simmer for 5 more minutes.
  9. Remove bay leaf before serving.

Notes

  • Use grass-fed beef for better flavor.
  • Adjust salt and pepper to taste.
  • Store leftovers in an airtight container for up to 3 days.
