A rich and creamy keto beef stroganoff made with tender beef, mushrooms, and a flavorful sauce.

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp butter
  • 1 small onion, diced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp sour cream
  • Fresh parsley for garnish

Instructions

  1. Heat butter in a large skillet over medium-high heat.
  2. Add the beef and cook until browned. Remove and set aside.
  3. In the same skillet, sauté onion and mushrooms until softened.
  4. Add garlic and cook for 1 minute.
  5. Pour in beef broth and scrape any browned bits from the pan.
  6. Stir in heavy cream, Dijon mustard, and paprika.
  7. Return the beef to the skillet and simmer for 5 minutes.
  8. Remove from heat and stir in sour cream.
  9. Season with salt and pepper.
  10. Garnish with fresh parsley before serving.
