  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  2. Add broccoli florets and broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches.
