Keto Cauliflower Fried Rice

A low-carb twist on traditional fried rice using cauliflower for a keto-friendly meal.

Ingredients

  • 1 medium head cauliflower, grated
  • 2 tbsp coconut oil
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce (or coconut aminos for keto)
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower into rice-sized pieces using a food processor or box grater.
  2. Heat coconut oil in a large pan over medium-high heat.
  3. Add the beaten eggs and scramble until cooked through. Remove from pan and set aside.
  4. In the same pan, add carrots, green onions, and garlic. Sauté for 2-3 minutes.
  5. Add the grated cauliflower and stir-fry for 5-6 minutes until tender.
  6. Mix in scrambled eggs, soy sauce, and sesame oil. Stir well.
  7. Season with salt and pepper. Serve hot.

Notes

  • Press excess moisture from cauliflower rice for better texture.
  • Add cooked chicken or shrimp for extra protein.
  • Store leftovers in an airtight container for up to 3 days.
