A low-carb, keto-friendly version of mac and cheese using cauliflower as a healthy alternative to pasta.

  • 1 large head of cauliflower, cut into florets
  • 2 cups shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam the cauliflower florets until tender, about 5-7 minutes. Drain well.
  3. In a saucepan, melt the butter over medium heat. Add the heavy cream, cheddar cheese, Parmesan cheese, garlic powder, and onion powder. Stir until the cheese is melted and the sauce is smooth.
  4. Combine the steamed cauliflower with the cheese sauce. Mix well.
  5. Transfer the mixture to a baking dish. Bake for 15-20 minutes, or until the top is golden and bubbly.
  6. Remove from the oven and let it cool slightly before serving.

Notes

  • You can add cooked bacon or diced ham for extra flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
