A delicious and guilt-free version of the classic Chicken Cordon Bleu, perfect for those following a keto diet.

  • 2 boneless, skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1 cup almond flour
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts and pound them to an even thickness.
  3. Layer each chicken breast with slices of ham and Swiss cheese.
  4. Fold the chicken over to enclose the filling and secure with toothpicks.
  5. In a bowl, mix almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  6. Dip each chicken piece in beaten eggs, then coat with the almond flour mixture.
  7. Heat olive oil in a skillet over medium heat and brown the chicken on both sides.
  8. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
  9. Remove toothpicks before serving.
